Hot Dish

This recipe originated from one of the other mothers who brought it to a Cathedral School potluck dinner. In the old-old days, families would gather in the parish hall for supper, (the Moms brought hot dish, jello salad or bars) then after supper, the parents would meet while we kids ran through the tunnel over to the school gym to watch a movie. (On a screen with a projector, not a video.)

2 pounds ground beef

1 cup chopped celery

1 large onion, chopped

1 can cream of mushroom soup

1 can cream of chicken soup

4 ounce can mushrooms, drained

2 soup cans water

1/2 cup soy sauce

1 cup raw rice

Brown meat and onion in a skillet. When cooked, combine with rest of ingredients in a large, buttered casserole dish. Bake, uncovered, for 2 hours at 325 degrees.
