Spinach and Bean Sprout Salad
1/3 cup salad oil (not olive oil)
1 T. sugar
1 T. soy sauce
3 T. red wine vinegar
1/2 tsp. mustard
1 red pepper (plain or roasted)
1 pound bean sprouts, rinsed and drained
1 bag fresh spinach
1/2 pound fresh mushrooms, sliced
Fresh ground pepper
Place spinach, peppers, bean sprouts and mushrooms in large salad bowl. Mix dressing ingredients together and pour over; toss salad. Let this sit for 20-30 minutes, then sprinkle with fresh ground pepper and serve.
