Roasted Cabbage With Dijon Butter Sauce

A part of our St. Patrick’s Day feast.

1 full head of green cabbage

For sauce:

 3T melted butter

2T minced chive

1T Dijon

½t minced garlic

Pinch of salt and cracked pepper

For cabbage: Preheat oven to 450. Leave the cabbage core intact (this will help keep it from falling apart), but remove any wilted looking outer leaves. Cut into 1/8ths. Place on cookie sheet lined with parchment paper. Drizzle with olive oil, salt and pepper. Bake for 10 min or until lightly browned, flip and bake another 8-10 min or until lightly browned.

 For Sauce: Whisk ingredients until it forms a thick sauce.
