Strawberry spinach salad

Every time Diana makes this salad, she is asked for the recipe.  She discovered this recipe many years ago when asked to be a  judge at the Poteet Strawberry Festival.  It was such fun.  It is amazing how many recipes have strawberries in them…delicious! 

For the salad: 

12 oz. fresh spinach, washed and torn into bite-size pieces

1 head Boston lettuce, washed and torn into bite-size pieces

1 pint fresh strawberries, sliced

½ cup pecans, chopped

Dressing:

1/3 cup raspberry vinegar

¼ tsp. salt

½ cup sugar

1 T. poppy seeds

2 tsp. dried instant minced onions

¾ cup vegetable oil

 Make sure salad greens are thoroughly dry.  Combine greens with strawberries and pecans.

For the dressing:  Mix dressing well and add to greens just before serving.

Tip:  Store dressing in a small Tupperware container and shake well before adding.
