Fancy Mushroom Toast

This makes a great appetizer, but we usually end up just having it for dinner. 

6 tomatoes 

8 cloves of garlic

Package of mushrooms 

½ cup of sherry or marsala wine 

Olive oil

Butter

Goat cheese 

Crusty bread 

Coat your tomatoes and garlic in a pan with olive oil and roast at 400 degrees until garlic has browned and tomato skin has blistered, about 20-40 minutes. When the tomatoes are done take them out and let them cool until you can remove the skin. 

In a skillet saute the mushrooms with a Tbsp of butter until brown. Deglaze the pan with sherry. Add the peeled tomatoes and garlic and mash them with a large spoon until you get a rustic sauce. Simmer for 10 minutes. Add salt and pepper to taste. 

To serve toast some bread and spread on some creamy goat cheese. Top with the Tomato mushroom mixture and enjoy.
