German Potato Salad

Potatoes 4-5 Yukon gold 

1 white or yellow onion 

2 C veg broth 

1 ½ C veg or canola oil 

Tbsp Sugar 

2 Tbsp Dijon mustard

1 C vinegar (white or apple cider) 

Salt & pepper to taste

Optional: Chopped parsley or chives

Boil potatoes until soft about 30 min. Let cool enough to handle. Peel and slice. Size onion and saute in oil. Heat veg broth, add remaining ingredients. Toss with onion and potato mixture.
