Salad Nicoise (for two)
Good lettuce (baby spinach works best)
Grilled tuna steak, salmon, or chicken breast
4 or 5 baby red potatoes l avocado
Feta cheese (or Gorgonzola or blue) Cherry or Roma tomatoes Cooked green beans (optional) Put ingredients in a bowl. Add spices; fresh ground pepper, one of those all-purpose salt free blends, garlic salt etc. Add 3 tablespoons of balsamic vinegar to a small bowl. Slowly whisk in olive oil to this, (about 2 tablespoons).
Get you some crusty bread and a bottle of red wine and you got supper right there.
