Lillis’ Lemon Bars

This is my personal favorite of all the bars. I’ve doctored the original recipe so that it has more lemon juice—makes a tangier lemon taste.

2 cups flour

1/2 cup powdered sugar

1 cup cold butter, cut into tablespoon size pieces

4 large eggs

1 1/3 cup sugar

7 T. lemon juice

4 T. flour

1/2 tsp. baking powder

Preheat oven to 350. Butter and flour a 9 x 13 inch baking pan. Put flour and powdered sugar into food processor; process briefly to mix. Add butter; process until mixture is fine and crumbly. Pour into prepared baking pan. Pat firmly to make a crust. Bake 20-25 minutes until light golden brown.

While baking, add eggs to food processor bowl (You don’t have to wash it after the flour mixture). Process briefly; add sugar; process again. Add lemon juice, process again, then add flour and baking powder; process to mix. When crust is ready, pour egg mixture over it, place pan back in oven and bake an additional 20-25 minutes. When cool, sift powdered sugar over the top; cut into squares.
