Oatmeal Pancakes
2 cups quick-cooking oatmeal (regular old-fashioned works fine too; they’ll just be chewier)
1 ½ cups milk (or alternative)
½ cup granulated sugar (feel free to adjust/experiment with brown sugar)
1 tsp. baking powder
2 eggs, well beaten
dash of salt
¼ tsp. cinnamon
go nuts and add nutmeg, cloves, allspice…
Mix all ingredients; beat into thin batter. Cook on greased griddle until done. Add milk if batter isn’t thin enough.
