Nut Bread
This was the alternative to banana bread; a very different taste, but if you like walnuts, you’ll like this.
1 cup brown sugar
1 egg
3 T. melted butter
1/2 tsp. salt
1 tsp. vanilla
1 cup sour milk (Place 1T. white vinegar in a one-cup measuring, fill with milk at room temperature-- heat in microwave for 15 seconds if milk is cold) 1 tsp. baking soda
2 cups flour
1 cup coarsely chopped walnuts
Beat egg and brown sugar together; add melted butter, salt and vanilla. Add baking soda to sour milk—it will foam and double in size, so pour milk into a larger container first. Add sour milk to the egg mixture alternating with the flour. Stir in chopped walnuts. Pour into a buttered and floured loaf pan. Bake at 300 for 1 1/4 hours. Check by poking a toothpick into the center. If it comes out sticky, leave in oven for 5 minutes more, then test again. Turn nut bread out of baking pan onto a rack to cool. Cool completely before slicing. Slices better if made a day ahead, then wrap in plastic wrap or foil after completely cooled.
