Sunday Brunch Casserole

Back in the late 1970s, Grandma served Sunday brunch (attendance was as required as church). James Mark, Chris and Brian (the babies) were entertained by Grandpa who would make funny faces at the table while Grandma dished up the potatoes.

1/2 pound sliced bacon

1/2 cup chopped onion

1/2 cup chopped green pepper

12 eggs

1 cup milk

1 package frozen hash browns

1 cup cheddar cheese, grated

1 tsp. salt

1/2 tsp. pepper

1/4 tsp. dill

Cook bacon in a skillet until crisp. Remove, drain, and crumble. In the drippings, sauté onion and green pepper until tender. Remove with a slotted spoon. Beat eggs and milk in a large bowl. Stir in hash browns, cheese, salt, pepper, dill, onion, green pepper and bacon. Transfer to a greased, 13 x 9 inch baking dish. Bake at 350, uncovered, for 35-40 minutes, or until a knife blade inserted near the center, comes out clean. Serves 6-8.
