Grandma’s Pancakes

This is a LeRoux classic, even though Fred reverted to Hungry Jack when he cooked for himself. I’ve impressed many of Mark and Emily’s friends with homemade pancakes; you all have probably done the same with your kids’ friends too. The secret is separating and beating the egg whites.

2 cups flour 4 tsp. baking powder

4 T. sugar dash of salt (I add either a dash of cinnamon or nutmeg)

4 T. melted butter

2 cups milk

2 eggs, separated

Sift together flour, baking powder, sugar, salt, cinnamon or nutmeg. Preheat pancake griddle. Melt butter in a medium size pan; (I add the milk once the butter is melted to warm it slightly) Beat egg whites till stiff but not dry; add milk-butter to dry ingredients, mix quickly just to incorporate the dry ingredients, then fold in egg whites.
