Carrot Ginger Shrub

¾ cups turbinado sugar 

1 ½ cups apple cider vinegar 

4 carrots 

1 medium ginger root peeled 

2 orange juice and rind

1 lemon rind

Blend the sugar, vinegar, carrots, orange juice, and ginger together. Pour into a jar with the orange and lemon rind that have been scrapped of pith. Store in a cool dark place for one week shaking the mixture once a day. Strain through fine cheese cloth or mesh strainer. Refrigerate for up to a month. Use like any other shrub adding about 1oz shrub to 3oz drink of choice.
