Roasted Blueberry and Basil Margarita
For syrup:
1 cup blueberries
1 bunch basil
½ cup sugar
½ cup water
For drink:
1.5 oz Tequila
2 oz lime juice
2.5 oz blueberry syrup
2 oz grand marnier
Wash blueberries and place them on a cookie sheet lined with parchment paper, sprinkle on some salt and bake at 400 degrees for 10-15 minutes or until blueberries have opened and roasted slightly.
While you’re waiting on the berries make a basil symple syrup by combining sugar and water in saucepan with the basil leaves. Bring that mixture to a boil then let cool and strain.
Combine blueberries and basil syrup in a blender and puree. You can strain this if you don’t like the chunks, but who’s got time for that? This syrup will last for a week, but once you start using it it’s going to go fast.
