Porcupine Meatballs

The older LeRoux children remember having these for supper; they were also a favorite of Nora and Emma’s when Grandma made them.

1 pound ground beef

1 onion chopped

salt, pepper

Mix together with:

1/3 cup raw rice

2 tsp. baking soda

1/2 cup milk

Mix ingredients together; form into balls, Place in a casserole dish, pour a can of tomato soup, or tomato sauce over them. Cover with foil. Bake 35 minutes at 400 degrees; take cover off, bake 35 minutes, uncovered at 350 degrees.
