Wild Rice Soup

This recipe has converted many people to the wonderful flavor of wild rice.

1/2-1 cup wild rice, cooked

1 medium onion, chopped

1 lb. fresh mushrooms

3 T. butter 1/4 cup flour

4 cups chicken broth

1 cup light cream

1/4 cup sherry

Parsley, salt, and pepper to taste

Cook wild rice; set aside. Sauté onion and mushrooms in butter. Cook till onion is soft. Add flour, stir to mix in. Add chicken broth a little at a time, stirring to incorporate the flour. Bring to a boil, simmer 1/2 hour. (Can make ahead at this point and refrigerate) Add cream and rice, simmer 1/2 hour. Just before serving, add sherry. Taste for seasoning, sprinkle with parsley before serving.
