Impossibly Easy Taco Pie
This recipe is great for those busy school nights with only 15 minutes of prep time to spare! It is a good alternative to our Tuesday Taco Nights.
1 lb ground beef or turkey
1 medium onion, chopped (½ cup)
1 envelope (1.25 oz) taco seasoning mix
1 can (4.5 oz) green chilies, untrained
½ cup Bisquick
1 cup milk
2 eggs
1 medium tomato, chopped (¾ cup)
½ cup shredded Colby-Monterey Jack or cheddar cheese
Heat oven to 400 degrees. Spray 9-inch glass pie plate with cooking spray. In a skillet, cook meat and onion over medium-high heat until done; drain. Sprinkle taco seasoning mix over meat mixture. Spread in pie plate. Top evenly with chilies. In medium bowl, stir Bisquick mix, milk, and eggs with wire whisk until blended. Pour into pie plate. Bake 25 minutes. Top with tomato and cheese. Bake 8 to 10 minutes longer or until cheese is melted. Let stand 5 minutes before serving. (6 servings).
Note: This pie is also perfect for potlucks. Simply double the ingredients and use a 13x9 inch glass baking dish. Bake 30 minutes, top with tomato and cheese, then bake 8 to 10 minutes longer.
