Vegetarian Chili

1 Red pepper diced

1onion finely chopped

2 cloves garlic, minced

1 package (12oz) soy crumbles

2 Tbsp chili seasoning (see below)

1 can kidney beans

1 can diced tomatoes

1 can tomato paste

½ cup chopped cilantro 

1 jalapeno

Shredded cheddar

Sour cream 

Sautee pepper, jalapeno, onion, and garlic. Stir in soy crumbles and chili seasoning. Add beans, tomatoes, and cilantro. Pour in some water (about a ¼ cup) to get the right consistency. Cover over low heat stirring occasionally for 20 minutes. Serve chili topped with cheese and sour cream, goes great with cornbread. 

For chili seasoning: 

2 Tbsp chili powder

2 Tbsp cumin

2 tsp paprika

2 tsp oregano 

1 tsp garlic powder

1 tsp onion powder
