Sweet and Sour Chicken
You all have your own Chinese recipes but this one is fairly simple, and can be adapted to your likes. I always try to add fruit and nuts to this recipe.
2 boneless chicken breasts cut in bite size strips.
Sliced onion
Green or red or yellow peppers in strips
Broccoli or snow pea pods (or both)
Nuts (cashews, almonds, walnuts or peanuts, even dry roasted will do)
Pineapple chunks or mango sliced
Rice or noodles
Mix 2 tablespoons of soy sauce with one tablespoons of cornstarch. You can add some garlic chili-paste or some other sauce or spice you like. Add the chicken, mix well and let it marinate for at least 30 minutes. In the meantime, cut up your vegetables. Cook your rice or noodles. Here is a tip. Broccoli and snow peapods can be precooked by bringing some water to boil adding one or the other to the pot, cover the pot, take off the burner and let it set for 3 or 4 minutes. Drain, place paper towels on a plate and put on the towels and cover with another paper towel. Heat wok to medium high and add oil. Cook onions, peppers first, and adding nuts when halfway through. Place back in bowl they were in. Add more oil to wok and add the chicken cooking and stirring often with wooden spoons until done. Add onions, peppers, nuts, broccoli or snow pea pods. Turn the heat down to medium low. Add fruit, add sauce (sweet and sour or any sweet chili sauce). Cook for about another
