Tan Tan Noodles
Cooked spaghetti
Slivered green onions—2-3 or more
1 cucumber, peeled, seeded and cut into matchstick size pieces
1/2 cup peanut butter (all-natural is best)
1/2 cup soy sauce
3 T. sugar
1/4 cup white wine
1/4 cup sesame oil
hot chili oil or red peppers
garlic powder
rice wine vinegar
Cook one package of spaghetti to al dente. While spaghetti is cooking, mix peanut butter, soy sauce, sugar, sesame oil, chili oil or red peppers to taste, garlic powder, wine in a large bowl (This is the bowl you’ll use to serve the noodles) Add a few sprinkles of rice wine vinegar to make a smooth mixture. In a separate bowl, place the cucumber; cover with rice wine vinegar. Drain spaghetti, pour into the large bowl, toss to mix with peanut sauce; top with cucumbers and green onions.
