Glorified Rice
Mom served this for ladies’ lunches. They all loved the strange combination of marshmallows, pineapple and rice.
Bring 2 1/2 cups water to boil in a medium pot. Add a dash of salt and 1 cup rice Bring to boil again, then put on the cover and turn heat to simmer. Cook 20 minutes, then cool.
Add:
1 large can pineapple chunks, drained .
3/4 package miniature marshmallows (colored) (Make sure rice is cool before adding marshmallows or they will melt).
Cover and refrigerate overnight.
Before serving, beat 1 pint whipping cream till stiff, fold into the rice mixture. Put into a fancy crystal or glass bowl, top with maraschino cherries.
