Cranberry Jell-O Salad
1 package cherry Jell-O
1 cup boiling water
1 can whole berry cranberry sauce
1/2 cup finely chopped celery
1/4 cup chopped walnuts
1 cup sour cream
Dissolve Jell-O in boiling water, stir in cranberries, celery and walnuts. Fold in sour cream. Or, after dissolving Jell-O in boiling water, pour all the ingredients into a blender and turn on and off quickly once or twice to mix. You can make this in a ring mold (before pouring in the Jell-O mixture, take a square of paper towel, pour about a teaspoon of salad oil (not olive oil) onto it and rub all over the insides of the mold. Chill overnight. To unmold, wrap a wet dish towel around the mold, run a knife around the edge. Place serving plate upside down over the top of the mold, hold your breath, say a prayer and turn the mold over quickly. Repeat if necessary. Or, you can make it in a square pan and just cut squares of salad to serve.
