Coconut Rice

Onion finely diced

3 Tbsp oil 

2 cups rice 

2 tsp sugar

2 tsp salt 

1 1/2c vegetable stock 

Saute the onions in oil, sprinkle with salt and cook until soft. Add rice make sure it’s well coated in oil. Pour in coconut milk and stock, bring to a boil then cover and reduce heat to low. Simmer for 20 minutes. When done add sugar and fluff the rice, stirring in lightly with a fork. Add salt to taste.
