Baked Mac and Cheese

6oz cheddar (reserve 2 oz for top) 

4oz parmesan

1oz swiss

3oz cream cheese

½ onion finely diced

1 Tbsp Butter 

1 cup heavy cream 

(Optional ) 1 Tbsp Sambal Oelek (garlic chili) sauce

½ cup Panko breadcrumbs

1 package of Cavatappi pasta

Cook pasta for 1-2 minutes (shouldn’t be cooked all the way through). Combine bread crumbs and 2oz of cheddar set aside. 

For cheese sauce: 

Melt butter and sauté onion until tender. Add heavy cream and bring to a boil. Whisk in cheeses slowly. Add sambal sauce, if you have a stick blender, hand blend the mixture to make sure it’s creamy. 

Combine the sauce with pasta in a baking dish, cover with the breadcrumb mixture and bake at 400 degrees for 20 minutes or until lightly brown on top. 

Note: This cheese sauce is amazing and a great dip for homemade pretzels.
