Mexican Wedding Cakes
These are Nan’s recipe for powdered sugar coated Christmas cookies. As with most of her recipes there’s not much direction. Fortunately these cookies are almost foolproof.
1/2 pound margarine or butter
6 heaping T. powdered sugar Additional powdered sugar for rolling cookies after baked
2 cups flour
2 tsp. vanilla
2 cups chopped nuts
2 tsp. water
Food coloring if desired.
Cream butter and sugar together. Add rest of ingredients. At Christmas, Mom would take some of the dough and mix in green food coloring, another portion would get red food coloring. Drop from teaspoon onto cookie sheet. Bake at 300 degrees for 30-35 minutes. After cookies have cooled for at least 5 minutes, pour about a cup and a half of powdered sugar onto a large plate. Roll cooled cookies in powdered sugar before storing in cookie tins.
