Molasses Kringles
Molasses Kringles—Nan These cookies appeared every Thanksgiving—in addition to the pies—Pop loved them, so did Dad. They’re a Christmas cookie staple for Leslee and me. We sprinkle the tops with red and green sugar.
3/4 cup butter
3/4 cup sugar
4 T. molasses
1 egg
2 1/4 cups flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. ginger
1/2 tsp. salt
1/2 tsp. cloves
Cream butter and sugar; beat in molasses, then the egg. Sift dry ingredients together; mix into butter mixture. Cover and chill at least 2 hours, or overnight. When ready to bake, preheat oven to 375 degrees. Break chilled dough off into tablespoon size bits; roll into balls, place on cookie sheet about 1 1/2 inches apart. Press down on dough balls with a fork to flatten and make a hatch pattern. Sprinkle with white sugar or colored sugar. Bake for 8 min. Cool on racks.
