White Nut Cake

Another from the Margaret LeRoux collection.

The notation on the recipe says “Nora’s,” so I’m assuming it’s from Dad’s/Grandpa’s mother.

1 cup sugar

1/2 cup butter

Pinch of salt

Whites of 3 eggs, beaten stiff

1 1/2 cups flour (1/2 cake flour, 1/2 regular flour)

1 cup chopped walnuts (mix in with flour)

1 tsp. vanilla

1/2 cup milk

3 tsp. baking powder

Cream butter and sugar—not too much, then add egg whites, flour, milk, baking powder last. Pour into a greased loaf pan. Bake 35 minutes in a moderate (350) oven.
